It’s all about the jerk chicken at The Hibiscus Jerk Hut in Springfield, Missouri. This mouth watering, fall-off-the-bone Jamaican classic is served up in Springfield’s Food Truck Park. 

“The Hibiscus Jerk Hut is a traditional Jamaican cuisine,” said Gladstone Morrison, a native of Jamaica and owner of The Hibiscus Jerk Hut. “I try to bring cuisine from my island to Springfield so people can experience a little bit of my culture.”

Morrison picked up his cooking skills from his father in Jamaica, who ran a restaurant there for 15 years. After honing his skills at resorts, he decided on Springfield as the place to make a new home. 

“I heard about Springfield and all the opportunities it can bring a small business owner like myself and here I met my wife and we got married and I’m here from now on,” said Gladstone. “The experience of the people that I met over my years of being here — it was beautiful. I’ve met some awesome people and I could not have done it without my customers from Springfield. I love them to death!”

The Hibiscus Jerk Hut’s famous jerk chicken is a traditional Jamaican dish that sells out on most days. Gladstone prepares his fresh every morning and it includes a variety of spices from habanero pepper to cinnamon. You can order it as a platter with rice and peas (delicious parboiled rice, kidney beans and coconut milk), on a sandwich, in a wrap and even on a salad. 

The menu also includes a jerked hamburger, pastas and a number of homemade sides. Gladstone says his food speaks for itself and that he's gained quite a following after only a few months at the Food Truck Park.

“I have to say, the citizens of Springfield have dealt with me very, very well and they love the food and they love what I bring,” he said. “They love the ambiance, the experience — it’s like the island away from the islands. And they come here wanting that experience and I think when they leave here they got it.”

The Hibiscus Jerk Hut is open Monday through Friday from 11 a.m.-2 p.m. at the Food Truck Park near the corner of Chestnut Expressway and Glenstone in Springfield. They also offer catering services and free delivery.
